Green Thai Curry Cod Steaks
Serves 2
Ingredients
1 Sharwood's Thai Green Curry Simmer Sauce
2 tbsps vegetable oil
1 cup leeks, washed and thinly sliced
2 cups spinach leaves
1 cup mangetout
2 x 6 ounce cod steaks
Instructions
Step 1
Place half the oil (1 tbsp) into a large saucepan and heat.
Step 2
Gently fry the leeks for 2-3 minutes, adding the Sharwood’s Thai Green Curry Simmer Sauce, spinach and mangetout, and cook for a further 2 minutes.
Step 3
Meanwhile, heat the remaining oil (1 tbsp) in a large saucepan. Fry the fish for 3-4 minutes before turning and repeating on the reverse side.
Step 4
Serve alongside the Green Thai Vegetable Curry.
